One year!!!

We made it one whole year!  

Yesterday we were able to celebrate our one year anniversary.  It was really fun to look back at our wedding pictures and remember what an amazing day it was.  

We felt so blessed to have all our closest family and friends from far and wide willing to brave the St. George July heat to celebrate with us.  The day was so much fun.  We had a blast spending it with everyone and it was the perfect way to start out our lives together.  

To celebrate, we went down to the San Diego harbor and went on a harbor cruise.  The weather was perfect and we had a great time.  

Later that evening, we had dinner at The Melting Pot, a fancy fondue restaurant.  It's right across the street at our house and I've always wanted to eat there.  It was such a fun experience.  We went all out and got their four course meal.  

The first course was a spinach cheese dip that was SO good.  It's really cool because all the cooking is done right at your table.  Our waiter heated up the fondue pot and brought back the ingredients and made it right in front of us.  We had bread, veggies and some apples to dip.  

The next course was a salad.  We didn't get a picture but Chris got the spinach ceviche salad.  He said (in his best Chris Trager from Parks and Rec voice) "It was literally the best salad I've ever eaten."  I got the house salad and it was also pretty good.  

The third course was an assortment of steak, chicken, shrimp and vegetables that we cooked by dipping in a boiling vegetable broth for a couple minutes.  They gave us a bunch of sauces to dip and it was so good.  


They certainly saved the best course for last.  They gave us all kinds of goodies (fruit, marshmallows, brownies, pound cake and cheesecake) to dip in a dark chocolate and dulce de leche fondue.  You would think after three courses we would be full but we somehow found room.  

The whole meal we made it a point to order food that contained no alcohol but during our last course, our waiter brought out two flutes of champagne to have a toast for our anniversary.  Right after he set them down, he said "oh yeah, you guys don't drink." We had a good laugh about it.  

We waddled out of there stuffed and satisfied.  It was a definite splurge but a great way to celebrate such a great day!  Here's to many many more!

On a completely unrelated note, I have the song Rhinestone Cowboy in my head.  Weird.
